Thyme Roasted Potatoes
Ingredients
- 2 pounds of small golden or red potatoes
- olive oil
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 3 garlic cloves, minced
- 2 tablespoons of fresh thyme leaves
Instructions
- Preheat the oven to 425°F or 220°C
- Quarter the potatoes and place them in a large bowl. Add olive oil, salt, pepper, minced garlic, and thyme.
- Toss the potatoes around gently, so they are coated with the seasonings.
- Spread out on a large baking sheet and roast for 20 minutes before flipping them over and roasting for another 20 minutes or until they are crispy and golden brown.
